Caramelised Banana Pancakes with Berry Chia Jam

The easiest, and yummiest oat, banana pancakes ever. The caramelised banana and chia jam just makes this. Also if your a passionfruit addict like me then you have to add fresh passionfruit on top. With 2 eggs and collagen these create the perfect protein pancake without the taste of yucky protein powders.

Ingredients:

Serves 1-2

Pancake batter

  • butter or coconut oil to cook

  • 1 large banana

  • 2 eggs

  • 1/2 cup oats (blitzed into oat flour)

  • 2 tbsp collagen (optional: could use protein powder also or add extra oats)

  • 1 tsp cinnamon

  • dash of salt

Berry chia jam

  • 1/2 cup frozen berries/blueberries

  • 1 tbsp chia seeds

Caramelised banana

  • 1 banana

  • 1 heaped tsp butter or coconut oil

  • 1 tbsp honey or maple syrup

Toppings:

  • Passionfruit pulp

  • coconut yoghurt

  • coconut flakes

  • maple syrup

To make pancakes:

Mash banana and whisk eggs together. Add in oat flour, collagen, cinnamon and salt. Preheat saucepan and add coconut oil or butter to cook 1 pancake at a time.

To make jam:

Heat berries and chia seeds in a small saucepan. Continue to stir and cook until becomes a jammy consistency (approx 5-10 mins)

To make caramelised banana:

Chop banana up. Mix honey and butter/coconut oil and add to a medium heat pan let cook for about 1-2 mins until golden then turn bananas over.

Top pancakes with all the goodies and enjoy :)
